Cauliflower Frittata

Serves 6

  • 275g cauliflower
  • 4 eggs beaten
  • 100g mozzarella, grated
  • 50g Parmesan, finely grated
  • 2 tablespoons of chopped parsley
  • 2 spring onions, chopped
  • 1 red chilli, diced
  • ½ teaspoon of coriander powder
  • ½ teaspoon of cumin powder
  • Salt and pepper to taste

Blitz the cauliflower in a food processor to resemble quinoa ,transfer to a bowl, add the eggs, mozzarella, parmesan, chopped parsley, chopped onions, diced chillies, cumin, coriander and season with salt and pepper.

Take some baking parchment, lay on a roasting tray and then spread the mixture.

Bake at 180oC for between 12-15 minutes.
