In this week’s lesson Matt makes a soup you can literally make in 15 minutes. A super healthy vegetarian dish which is perfect for a mid-week dinner or a quick and tasty lunch.
Cauliflower Soup with Cheddar
Serves 4
1 large Head of Cauliflower, cut into little flourettes1 Medium Onion2 cloves garlic finely diced1/4 teaspoon chilli powder2 pints of vegetable stock1 large handful of grated extra mature cheddar
Gently fry the onions with the lid on over a low heat, and when translucent addthe chilli powder and then the garlic.
Now add the Cauliflower, followed by the stock.
Bring to the boil, and then simmer for 10 minutes, and then using a kitchenblender, blend until the mixture is liquid.
Add the grated cheese, and when melted salt and pepper.
