For the dark chocolate and miso mousse: 175g 70% dark chocolate buttons, 1 teaspoon miso, 210g water. 4x 5cm by 7cm rings.
Place the chocolate in a bowl. Put the water and miso in a small pan and bring to the boil, then pour onto the chocolate and mix thoroughly. Fill a large bowl with ice water and place the bowl with chocolate in the bowl with ice water, and whisk until soft peak texture. Place the moose in a piping bag and pipe into rings evenly. Put in the fridge to chill.
Salted caramel: 90g whipping cream, 1x tsp vanilla paste, 90g caster sugar, 75g unsalted butter, large pinch of Maldon sea salt.
Heat a heavy based saucepan. When it is hot, add the sugar, and cook until it is an amber caramel. Gradually add the cream to the caramel, and then the salt and vanilla paste. Mix well and then take off the heat. Add the butter, cube by cube. Allow to cool in the fridge.
Brookie: 60g 70% dark chocolate, 30g butter, 25g soft brown sugar, 10g caster sugar, 25g egg (1/2 egg), 20g plain flour, 1g bicarbonate of soda.
Preheat a oven to 170 degrees centigrade. Place the chocolate and butter in a bowl and put over a pan with simmering water to melt gently. Once melted allowed to cool slightly. Meanwhile whisk the eggs sugar and a pinch of salt for a couple of minutes. Pour the melted chocolate mix over the top of the eggs and whisk to combine. Sift in the dry ingredients and mix through. Place the mix in a piping bag, and pipe 4 cm rounds onto a non-stick mat. Bake in the oven for 5 minutes and allow to cool.
For the olive oil snow: 25g Extra virgin olive oil, 19g of maltodextrin powder, small pinch of salt.
Place olive oil in a mixing bowl with the salt, and slowly add the maltodextrin while whisking.
For the chocolate antlers and eyes: 20g 70% dark chocolate, 8 white chocolate buttons. Iced water.
Gently melt the dark chocolate in a bowl over a pan of simmering water, and then place in a piping bag. Pipe antler shapes into the iced water. For the eyes, put a dot of dark chocolate in the centre of the white chocolate button.
