Thanks for watching. I’m actually going make it worth your while, because am going to show you how to make a lovely Razor Clam Soup, and in doing so, teach you how to cook razor clams.
Hi. I’m going to show you how to cook razor clams. I did do it once before, a very long time ago, and it was a huge hit so I thought I’d do it again. I’ve got some onions here and they’re going straight into a pan. Hopefully, you can hear that sizzle. You need to let them sort of gently cook off for a minute or two. But I’m going to add some chili, like so and then I’m going to add some garlic.
This is what a razor clam looks like. It’s kind of like a long mussel. Now, I went through the bag and I took out all the ones with broken shells that looked a bit dark in color. They now go in. I’m going to add some white wine, like so and then stick the lid on. That’s going to cook for probably about five minutes, just steams and then we’ll get that that out, or them out, I should say.
What I’m going to do now is show you how to prep. Take the clams out. What you want to do is cut away the back side and that front bit I don’t like. So you’re left with that part. I’m going to prep the rest of these bad boys so when you come back it will all be done and then I’ll show you what we’re going to do with them.
Right, so those are now all prepped. I’m just going to roughly chop those up and those can now go in the center of the dish. We’re going to make a little bit of a soup with this, because we’ve got the lovely juice from the pan. So those go in the middle like that. The wine that we had is now a really nice sort of stalky consistency and I just think that this is quite a nice autumn meal, warmer as you come in from work, just a bit of chopped parsley to go in, a bit of olive oil on there. Actually I think that’s very nice now. I’m very happy with that. So there you have Razor Clam Soup.
