For the filling, fry off onion, garlic, and then chilli powder, the chorizo and bread crumbs. At the very end add the parsley. Stuffed Squid with Chorizo
Serves 2
6 Medium sized squid quill and guts removed
The tentacles from all 6 squid
1 small onion, diced
1 clove of garlic diced
½ tsp chilli powder
80g Chopped Chorizo
2 tablespoons toasted breadcrumbs
1 tablespoons chapped flat leaf parsley
small handful of black olives
1 large handful of clams, steamed in boiling water for 3 minutes
A very good extra virgin olive oil
