A Winning Combination?…

All the poles are suggesting that we’re headed for another hung parliament, although don’t be too worried as history is littered with plenty of coalitions that have confounded expectation. I’m thinking salt and vinegar, lamb and cumin, Curry’s PC World.

 

Surf and turf would be another culinary combination that shouldn’t work but does, and this week we watch smoked chorizo collaborate its meat manifesto with the strategy of stuffed seaside squid.

 

For the filling, fry off onion, garlic, and then chilli powder, the chorizo and bread crumbs. At the very end add the parsley. Once cool stuff squid with the mixture and then fry off in a pan with some rapeseed oil until browned all over the outside, which should only take a minute. Deep fry the tentacles and serve the dish with black olives, a few steamed clams and a good extra virgin olive oil.

Stuffed Squid with Chorizo

 

Serves 2

 

6 Medium sized squid quill and guts removed

The tentacles from all 6 squid

1 small onion, diced

1 clove of garlic diced

½ tsp chilli powder

80g Chopped Chorizo

2 tablespoons toasted breadcrumbs

1 tablespoons chapped flat leaf parsley

small handful of black olives

1 large handful of clams, steamed in boiling water for 3 minutes

A very good extra virgin olive oil
