Ginger Bread Men

Portion size 10 men

Equipment Needed: Hand whisk, Squeezy bottle/piping bag/washing up glove as improvisation/anything to put in icing sugar and decorate!

Ginger bread man cookie cutter (if you can’t find one print a stencil off the internet and improvise).

Ingredients:

350g plain flour, 1 tsp baking powder, 2 tsp ground ginger
1stp ground cinnamon, 125g unsalted butter, 175g light brown soft sugar
1 free-range egg, 4 tbsp golden syrup

For the icing:

1 egg white, 1 tsp lemon juice, 340g icing sugar

Sift together the flour, baking powder, ginger and cinnamon. Add the butter and mix together until you have a breadcrumb consistency (use an electric whisk).

Beat together the eggs and syrup; add to the flour mixture, then sugar until a dough is formed. Roll between two sheets of cling film, lay on a tray and cool in the fridge for 15 minutes. Using a cutter of choice, cut into shapes and lay back onto a baking tray.

Bake for 12-15 minutes at 160oC, then cool on a bakery rack.

For the icing:

Whisk together the egg white and lemon juice, slowly whisk in the icing sugar. Place in a squeezy bottle and use to decorate.
