Millionaire’s Shortbread

This week American rapper “50 Cent” filed for bankruptcy after declaring debts of over $5million, prompting suggestions that he may well have to change his name to “Less Than 2 Bob”.

 

If the US entertainer wants to continue enjoying the taste of success in spite of financial failure, then perhaps he should follow my recipe for millionaire’s shortbread.

 

Simply mix flour and butter in a food processor until you get a breadcrumb consistency, add caster sugar and pulse again. Press into a parchment-lined 23 cm square cake tin and bake for 30 minutes at 150oC.  In the meantime make the topping by heating butter, condensed milk and golden syrup; when thickened, cool and pour over the shortbread. Finish by adding melted chocolate over the caramel and allow to set in the fridge before cutting into squares.

 

I’m in the process of moving house, and yesterday experienced an overwhelming sense of freedom when filling a transit van full of household junk and discarding the lot at our local civic refuse center.

 

“Fiddy” shouldn’t feel too sad at loosing his fortune, as my trip to the rubbish dump proved there’s only one thing better then acquiring lots of stuff, and that’s getting rid of it.

 

Ingredients

 

For the shortbread

 

225g plain flour

175 unsalted butter, cold cut into cubes

75gcaster sugar

 

For the topping

 

150gunsalted butter

1x 400g-can condensed milk

100g golden syrup

350g 70% cocoa solid chocolate
